Healthy Recipe of the Month

Healthy Summer Picnic Meal

Turkey Burgers

This recipe serves: 4 Preparation time: 15 minutes Cooking time: 10 minutes

Ingredients

  • 4 tablespoons fat free mayonnaise
  • 4 tablespoons barbecue sauce
  • 1 pound lean ground turkey
  • salt to taste
  • freshly ground black pepper
  • 1/2 cup fresh, diced tomatoes
  • 4 large leaves of green leaf lettuce
  • 4 whole grain sandwich buns

Cooking Instructions

1. In a small bowl, stir the mayonnaise and barbecue sauce together.

2. Preheat the grill to medium-high.

3. Shape the turkey into 4 patties, about 1/2-inch thick. Season with salt and pepper and refrigerate until ready to cook.

4. Grill the burgers on both sides until they are cooked through, about 6 minutes per side.

5. Toast the rolls on the grill.

6. Top the burgers with the mayonnaise sauce, lettuce and diced tomatoes and serve them on the toasted rolls.

Fiesta Salsa

This recipe serves: 8  Preparation time: 15 minutes Cooking time: 10 minutes

Ingredients

  • 2 Roma tomatoes, diced or 2/3 cup chopped canned tomatoes
  • 1/4 cup diced red onion
  • 1 jalapeno pepper, seeded and finely chopped
  • 1/4 cup red or green peppers
  • 1 tablespoon chopped cilantro
  • 1 tablespoon fresh lime juice (about one lime)
  • salt to taste
  • freshly ground black pepper
  • dash hot sauce (optional)

Cooking Instructions

1. Place tomatoes, onions, jalape?peppers, cilantro and lime juice in a bowl. Add the salt, pepper and hot sauce.

2. Serve with tortilla chips or pita bread.

Wave Your Flag Cake

This recipe serves: 18 Preparation Time: 20 minutes Cooking time: 4 hrs, 25 minutes


Ingredients

  • 1 quart strawberries, divided
  • 1 1/2 cups boiling water
  • 1 pkg. (8 serving size) JELL-O Brand Gelatin, any red flavor
  • Ice cubes
  • 1 cup cold water ]
  • 1 (12 ounce) package pound cake, cut into 10 slices
  • 1 1/3 cups blueberries, divided
  • 1 (8 ounce) tub COOL WHIP Whipped Topping, thawed

Cooking Instructions

  1. Slice 1 cup of the strawberries; set aside. Halve remaining strawberries; set aside.
  1. Stir boiling water into dry gelatin mix in large bowl 2 minutes until completely dissolved. Add enough ice to cold water to measure 2 cups. Add to gelatin; stir until ice is melted. Refrigerate 5 minutes or until slightly thickened (consistency of unbeaten egg whites). Meanwhile, line bottom of 13x9-inch dish with cake slices. Add sliced strawberries and 1 cup of the blueberries to thickened gelatin; stir gently. Spoon over cake slices.
  1. Refrigerate 4 hours or until firm. Spread whipped topping over gelatin. Arrange strawberry halves on whipped topping for 'stripes' of 'flag.' Arrange remaining 1/3 cup blueberries on whipped topping for 'stars.' Store leftover cake in refrigerator.
