White Bean Pizza

White Bean Pizza
Serves 8

My dad always looked for interesting recipes that pushed the envelope. The following was one of his favorites that is a healthy alternative.

1/2 cup sundried tomatoes; halved
15 oz cannellini beans (white kidney)
2 ea garlic cloves
1 ea 12” whole wheat pizza crust
1/4 tsp dried oregano
1 cup fresh spinach leaves; thinly sliced
1/2
cup shredded Colby-Monterey Jack cheese

Heat oven to 425 degrees.Pour enough boiling water over sundried tomatoes to cover and let stand 10 minutes.Drain, cut into thin strips and set aside.

In food processor, place beans and garlic. Cover and process until smooth. Spread beans over pizza crust and sprinkle with oregano, tomatoes, spinach and cheese. Place on ungreased cookie sheet or pizza pan.

Bake about 10 minutes or until cheese is melted.
