Mark Shapiro's Fried Egg Sandwiches
Have you ever been to the Member Pancake Breakfast on Christmas Day and wondered why the JCC Staff, quite literally, have egg on their face? That is because our President & Chief Executive Officer, Mark Shapiro, has made them his famous fried egg breakfast sandwiches back in the kitchen, to thank them for working that morning. Mark has also been known to man the griddle and make these fan favorites at staff appreciation breakfasts and other occasions.
So why does he make these yummy breakfast sandwiches filled with cheese when he himself cannot eat dairy? Mark spoke with Charlie DeSando on his podcast “Cooking with Milwaukee Community Leaders” and shared stories about his upbringing, career path, servant leadership, and the JCC’s work to build a healthier, more inclusive Milwaukee – all while making his fried egg sandwiches for Charlie and others. RECIPE FOR EACH SANDWICH:
- 1 large butter croissant, sliced
- 2 large or jumbo eggs
- 1 oz shredded cheddar cheese
- Lawry’s Seasoned Salt (Must be Lawry’s…it’s the secret ingredient!)
- Cooking spray for griddle
